Whenever I visit my cousin at the weekend, I don't like to go empty handed. So, as her children have such healthy appetites and I really enjoy baking I decided to try out a new cookie recipe.
Orange Chocolate Chip Cookies
Yields 40 - 50 cookies
345grams unsalted butter
288grams granulated sugar
288grams dark brown sugar, firmly packed
2 teaspoons orange essence
2 large eggs
920grams flour
2 teaspoons baking soda
1 teaspoon salt
450grams milk chcolate chips - plus extra for finishing
Preheat oven to 180°C/350°F/Gas Mark 4.
In a large bowl mix the butter, sugars, eggs and orange essence together.
Add the flour, baking soda and salt.
Mix in Milk Chocolate Chips.
Using a measuring spoon drop balls of dough onto an ungreased baking sheet about 2-inches apart (dough will spread during the baking process).
Before putting the cookies in the oven to bake add a few more chocolate chips to each cookie. Bake 10 - 12 minutes or until light brown.
Leave on baking sheet for a few minutes to cool then place on a wire rack to complete cooling process.
I also used the above recipe to make some Raspberry White chocolate Chip Cookies. I just substitued the orange essence for raspberry essence and used white chocolate chips in place of milk chocolate chips. They are deliciously soft and chewy.
So, after putting a few (dozen) aside for myself and other family members I put together a little gift package for my cousin and her children. Just as well that I pust some aside, because the bundle I took to her house didn't last long and they put in an order for more!
